Pumpkin Sour

INGREDIENTS


  • 1 oz pumpkin spice syrup
  • 4 oz black tea
  • 1 oz fresh-squeezed lemon juice
  • 3/4 oz aquafaba
  • dash of turmeric (optional)
  • star anise for garnish

METHOD


  1. Brew your black tea according to package instructions and allow to chill.
  2. Once chilled, at the black tea, syrup, lemon juice, optional turmeric, and aquafaba to a cocktail shaker and dry shake without ice for 10 shakes or until nice and frothy.
  3. Add ice and shake for another 10 shakes or until chilled.
  4. Double strain* the mixture over a fine mesh strainer into a chilled coupe glass, shaking out the foam.
  5. Garnish with a star anise (or pumpkin pie spice).

NOTES


*Double straining just makes the mixture super smooth and pristine. Bartenders use this technique at bars. However, it is optional.
