Plum Lavender Shrub

INGREDIENTS

  • 1 cup ripe plums, sliced and depitted
  • 1 cup white sugar
  • 1 cup apple cider vinegar
  • 1 tsp lavender
  • 1 tsp vanilla extract

METHOD

  1. Add sliced plums and sugar to a bowl. Smash together really well until a soft mixture forms.
  2. Add vanilla, lavender, and apple cider vinegar and mix well.
  3. Store in the fridge for 3 days to let everything marinate. This will allow the sugar and fruit to soften the sharpness of the vinegar.
  4. Strain over a fine mesh strainer. You may need to press the mixture down to extract all of the liquid.
  5. Use 1 oz for every 6 oz of sparkling water, and add more depending on how strong you want the flavor to be. You can also add this into your coffee or with milk (or half and half) to make a creamy mocktail.
